The Filling

  • 3-4 spring onions, finely chopped
  • One thumb-sized piece of ginger, chopped into matchsticks
  • 100g clarified butter
  • 2-3 whole star anise
  • A handful of chopped spinach

The Dipping Sauce

  • 1 tspn Chiu Chow chilli oil
  • 1 tbsp light soy sauce
  • approx. 2tbsp Chinkiang black rice vinegar
  • dash of sesame oil
  • dash of sugar
